This sandwich is more dressed up than I have been in weeks!
It’s a bright sunny day and above all it’s Sunday and the bonus is that I am Happy 🙂 . I was having difficulty in sleeping since last few days. I read few related articles and decided to go for a long walk and it helped. I slept early yesterday, had a calming sleep and woke up fresh.
Usually my first meal of the day is tea with couple of cookies. But today I was really hungry right early in the morning…….made this quick sandwich. It’s healthy, delicious, yet low in calories. No one wants to gain weight at this time and we all still crave for yummy food.
After my tummy was full, mummy crossed my mind 😉 . I call my parents twice a day and sometimes thrice. Like any other kid I miss them and with quarantine and travel restrictions I don’t know when I will be able to fly and see them again. I believe this is the emotion for many of you. I can keep talking but let’s go to the recipe 🙂 .
A healthy green sandwich :). This healthy and savory sandwich is made with broccoli, avocado, onion, tomato, mint, ginger, plain yogurt and few spices.
Add all the ingredients in a container and mix well.
Apply a thick layer of mixture on the bread slice and spread it evenly.
Cover it with another slice of bread.
On a preheated skillet, bake the sandwich on medium heat.
Keep flipping sides until completely baked.
Enjoy fresh green broccoli and avocado sandwich with your choice of sauce.
